One Pot Creamy Lasagna Soup

At the end of a long day, coming up with something for dinner that everyone will enjoy, that won’t create a pile of dishes to add to your already exhausting to-do list, can feel impossible. I’ve got you! This crowd pleaser takes 20 minutes max and is all done in one single pot!

You will need avocado oil, an onion, garlic, dried oregano, dried thyme, nutritional yeast, salt & pepper, Fire Roasted Diced Tomatoes, bow tie pasta, vegetable broth, heavy cream, parmesan cheese, ricotta cheese, spinach, parsley and additional parmesan cheese for garnish if you want. Heat oil in a large pot over medium-high heat. Add the diced onion and a pinch of salt and pepper. Sauté for about 3-4 minutes.

Add garlic, oregano, thyme, nutritional yeast and more salt and pepper. Sauté for another couple of minutes.

Add in tomatoes, broth and uncooked pasta.

Bring to a gentle boil, then reduce heat, cover and simmer until pasta is tender (about 8-10 minutes).

Once the pasta is cooked to your preferred doneness, remove from the heat and add in the cream, and parmesan. Stir until the cheese is fully melted. Add in the ricotta and spinach and stir until well combined and the spinach is wilted.

Top with parmesan and parsley or as desired. Enjoy!
