Taco… Thursday…?
Anyway… Fish taco night at home is such a fun family event! My three year old ate so well that night because she got to build her own tacos. These tacos are simple but amazingly delicious! We ate a few too many because they were just so addictive. Let me know if you try these with your own family!

Ingredients
Fish Tacos:
- 2 lbs Rockfish, cut into chunks
- 10 oz panko bread crumbs
- ¼ cup grated parmesan
- 1 tsp Garlic salt, to taste
- 1 tbls Taco seasoning, to taste
- Salt & pepper to taste
- Olive oil (for spritzing or frying)
- Hard and/or soft taco shells
- Thinly slice onions
- Slice bell peppers
- Halve cherry tomatoes
- Spinach leaves
Avocado Sauce:
- 2 small avocados
- 1 clove of garlic
- ¼ cup fresh cilantro
- ¼ cup fresh parsley
- Juice of 1 lime
- 2 tbls olive oil
- Salt & pepper to taste
Instructions
- In a bowl combine bread crumbs, parmesan, garlic salt, taco seasoning, and salt & pepper
- Coat the rockfish chunks in the breadcrumb mix
- Heat oil in a non-stick skillet to medium heat. (alternatively use air frier instead of oil frying)
- Fry rockfish chunks until gently flakes apart. Remove from pan and set on a plate to rest
- Make the Avocado sauce by adding all ingredients to a blender or food processor and blend fully.
- Slice the vegetable toppings
- Assemble tacos to your personal preferences
