Top 5 Make Ahead Freezer Breakfasts

Breakfast is the most important meal of the day right? Meh, debatable… Check out my previous post for more on that.

Regardless, when you want breakfast you don’t always have time to make an elaborate, delicious meal to start your day. Whether you are rushing out the door to work, rushing to your home office to jump on an early morning zoom meeting or simply too tired to slave over a stove before the coffee has even kicked in. I have encountered all of these on a regular basis. None of these are good reasons to not get the breakfast you are craving!

Here are my Top 5 Make Ahead Freezer Breakfasts to help you start your day fast but right!

1. Breakfast Burritos
These breakfast burritos are my personal favorite! It’s quick but makes it feel like a special breakfast. How to make them is pretty much up to you and your personal tastes. For mine, I fully cook scrambled eggs (salt& pepper to taste), cubed potatoes (creole seasoning & garlic powder to taste), and chopped plant based “sausage”, I quickly sauté mushrooms and onions, slice up some black olives, shred some cheddar cheese and mix it all together in a large bowl. Scoop some filling into a large flour tortilla and wrap into a burrito. I then wrap each burrito in foil and store in the fridge or freezer ready to grab. When you are ready to eat it, remove the wrapping, zap it in the microwave for about 1-2 minutes, then grill for a couple minutes on each side in a hot pan to get that crispy outside!

2. Egg Bites
These little bite sized breakfasts cram a lot of value into a small little package! Grease a muffin tin and preheat your oven to 375 degrees. On the bottom rack of your oven place a deep baking sheet filled with water to keep the oven moist. In a blender add as many eggs as you have muffin slots, add 1-2 avocado, 1/2 cup salsa, 1 bell pepper diced, 1/2 cup spicy sautéed mushrooms and blend until smooth. Pour mixture into each muffin slot leaving only a small space from the top. Top each muffin slot with shredded cheese and bake for 30 minutes. Wrap these in plastic wrap and they will keep in the fridge for about a week.

3. Pancakes
Serving your family pancakes for breakfast during the week is like the most put together mom thing ever! I’m not that put together, especially before coffee… So making a big batch of these on the weekend and quickly warming them up throughout the week makes me feel like I’m rocking it without having to get up early and be prepared! Whisk together 2 eggs, 1 cup Greek yogurt (I like to use the Honey or Strawberry flavor), 1/2 cup milk, and 1 tsp vanilla extract. Add 1 cup flour, 1 Tbsp. sugar, 2 tsp baking powder and 1/2 tsp salt. Mix until you have a smooth batter but try not to over mix. Cook the pancakes to your preferred size until all of the batter is gone. Serve some fresh but store the rest in an air tight container, in the fridge for up to a week. Reheat in the microwave or on he stove and serve as needed!

4. Bacon, Egg & Cream Cheese, Bagel Sandwiches
I made a tone of these right before my daughter was born and I’m telling you they saved me in those early days of motherhood! cook the bacon (or bacon substitute), fully cook the scrambled eggs (salt and pepper to taste), I choose cheese bagels (I was pregnant remember…), spread each side with cream cheese, add eggs, and a couple slices of bacon. Wrap the whole sandwich in foil and throw in the freezer until you’re ready for it. Throw the entire thing (foil and all) into a 375 degree oven for about an hour and a perfectly toasty breakfast sandwich is yours!

5. Individual Smoothies
These work best if you have the ability to vacuum seal the bags. In each bag throw half a banana, 4 strawberries, two ice cubes of Greek yogurt (seriously! freeze Greek yogurt in ice cube trays for perfect portions), 3 baby carrots, a handful of grapes, and stuff the rest with your favorite greens (I prefer spinach but kale works too). Vacuum seal the bag and repeat for as many bags as you want. Grab a bag, toss it straight into a blender, add a liquid (milk, water, juice) and BAM! instant healthy breakfast! These will stay good in your freezer for up to a year!
